4 lobster buns with crayfis
- 4 tablespoons mayonnaise
- 2 tablespoons sour cream
- ½ tablespoon lemon juice
- 1 tablespoon parsley (fresh - finely chopped)
- 1 tablespoon chives (fresh and finely chopped) + extra for garnish
- 200g crayfish
- 4 x brioche bread rolls or white buns
- 40g corn salad
- Fleur de sel and pepper
Place the mayonnaise, sour cream, lemon juice, parsley and chives in a bowl and mix.
Mix in the crayfish and season with pepper and fleur de sel.
Cut the bread into pieces and spread the lamb's lettuce over the top.
Then divide the crayfish over the buns and garnish with some fleur de sel and some extra chives to taste.
